  • 1 cup brown sugar
  • ½ cup unsalted butter
  • ½ cup light corn syrup or honey
  • 1 tsp cinnamon
  • 1 tsp vanilla extract

Step 1: Make the Dough

  1. Dissolve the yeast in warm milk for 5 minutes.
  2. In a bowl, mix flour, sugar and salt.
  3. Add butter, egg, vanilla, and the yeast mixture.
  4. Knead until smooth and soft.
  5. Cover and rest the dough for 30 minutes.

Step 2: Make the Caramel Filling

  1. Heat butter, brown sugar and syrup/honey in a saucepan.
  2. Stir until thick and caramel-like (about 5 minutes).
  3. Add vanilla and cinnamon.
  4. Keep warm — the caramel needs to stay spreadable.

Step 3: Cook the Waffles

  1. Preheat a stroopwafel iron or thin waffle iron.
  2. Divide dough into small balls (about the size of a golf ball).
  3. Place one dough ball in the iron and cook until golden brown.
  4. While hot, slice the waffle horizontally into two thin layers. (Use a serrated knife.)

Step 4: Assemble

  1. Spread a thin layer of warm caramel onto one cookie.
  2. Place the second half on top and gently press.
  3. Repeat for all stroopwafels.
