Thai Chicken Fried Rice.

  Ingredients:  1. 250 gm chicken thinly sliced. 2. 2 cups rice. 3. 6-8 cloves garlic. 4. 10-12 bird eye Chilli. 5. 1/4 cup oyster sauce. 6. 1 tablespoon soy sauce. 7. 1 teaspoon sugar. 8. 1/2 teaspoon salt. 9. 1/2 teaspoon pepper powder. 10. 1 big onion sliced. 11. 2 tablespoon oil. 12. 1/2cup basil leaves. 13. Fried eggs. Cooking Process: 1. Boil rice with oil and salt. Strain and keep aside. 2. Marinate thinly sliced chicken in 2 tablespoon oyester sauce ,1 teaspoon soy sauce and pepper & set aside. 3. In a mortar pestle pound garlic,birds eye Chilli, and a pinch of salt into a rough paste & keep aside. 4. In a bowl make stir fry sauce,combine oyster sauce& sugar. Mix & keep aside. 5.   Ingredients: For the Marinade 1. 6 cloves garlic. 2. 1and1/4 teaspoon salt. 3. 3/4 teaspoon ground cumin. 4. 3/4  teaspoon freshly ground black pepper. 5. 1/2 cup sour orange juice or lime juice. 6. 2tablespoon olive oil. For the steaks 1. 4(6-8;ounce) beef steaks, cut 1/2 inch thick (bottom round,top round,sirloin etc)  2. 2 large onions cut into 1/2 inch slices. 3. 2 tablespoon olive oil. Directions: 1. Preheat grill to high. 2. Spanish chickpea And Spinach Stew Recipe.

  Ingredients 8 ounces dried garbanzo beans (chickpeas) 1 TBSP plus 2 TBSP olive oil 6 ounces fresh baby spinach 2 ounces whole wheat bread, cut into cubes 1/4 cup raw almonds 1 roma tomato, roughly chopped 2 garlic cloves, peeled and roughly chopped 2 TBSP red wine vinegar 2 tsp smoked paprika 1 tsp ground cumin 1/8 tsp cayenne pepper salt & pepper Directions Sort through the chickpeas to remove any stones or debris. Rinse the chickpeas then place in a large bowl and cover with plenty of cold water. Cover the bowl and refrigerate for at least 8 hours. Drain the chickpeas and add them to a dutch oven covered with plenty of water and 1/4 tsp salt. Bring to a boil over medium-high heat. Cover the dutch oven and reduce the heat to medium-low. Traditional South African Fish Cake Recipe.

  Ingedients:  1. 500 gm of cooked flaked or minced fish. 2. 300 gm of dry mashed potatoes ( No salt or butter). 3. 3 tablespoon onion, finely grated. 4. 1 tablespoon lemon juice. 5. 2 tablespoon chopped parsley. 6. 2 tablespoon melted butter. 7. 2 eggs separated. 8. Salt and pepper to taste. 9. Bread crumbs. 10. Fat or oil for frying. Directions: 1.  Mix the fish with the potato, onion, lemon juice, parsley and butter. 2. Mix the two egg yolks with the egg white of one egg and add to the fish mixture. 3. Season with salt and pepper. 4. Shape into balls and flatten slightly. 5. Beat the remaining egg white and dip each fish cake into the egg and then into the crumbs. 6. Fry in oil or fat until brown on both sides. 7.  Serve with lemon wedges.

Lemon Chicken Cutlet.

Ingredients: 1. Lemon sauce. 2. 2 fresh lemons juiced and seeded. 3. 1/4 cup extra vergin olive oil first cool pressed. 4. 1/4 teaspoon Black pepper. 5. 1/4 teaspoon of minced garlic or garlic powder. 6. 1/4 teaspoon of oregano and 1/2  tablespoon of chopped parsley. Mix together and set aside till the end. Chicken preparation: 1. 4 boneless Chicken breasts sliced 1/4 inch thin. 2. 1 cup italian flavoured bread crumbs add 1/4 cup crumb grating cheese. Put in a flat plate. 3. 1 egg beaten mixed with 1/2cup water put in a bowl. In a plastic bag add 1. 1/2 cup flour. 2. 1/2 teaspoon each of garlic powder, dried oregano, parsley and basil, 1/4teaspoon salt, pepper and cayenne pepper. Directions: 1. Shake chicken in flour mixture. 2. Dip each piece in egg then bread crumbs. 3. Fry each piece in olive oil with a mixture of 2 tablespoon butter in pan, brown on both side, put into baking dish. Spicy Shrimp Moroccan Style.

  Ingredients: 1. 2 pounds uncooked shrimp, shells and tails are removed ( Zlarge or jumbo best but medium works too). 2. 4 garlic cloves, peeled and crushed. 3. 1/4 cup oive oil. 4. 1 teaspoon paprika. 5. 1and 1/2 teaspoon of cumin. 6. 1 pinch cayenne pepper. 7. Kosher or sea salt and fresh ground black pepper to taste(shrimp needs salt so be generous) 8. 1/4 cup chopped italian parsley. 9. 1/4 cup chopped cilantro. Directions: 1. Fry the garlic in olive oil over medium heat until it turnsight gold. Add the spices, salt and pepper and mix well with spatulla. 2. Add the shrimp and fry them over medium heat for 8-10 minutes, stiring constantly (12-15 minutes for jumbo shrimp). Add the chopped herbs and cook for another 2 minutes. 3. Roasted Jamaican Jerk Chicken Recipe.

  Ingredients 2 TBSP olive oil 1 TBSP onion powder 1 TBSP garlic powder 1 tsp ground allspice 1 tsp cayenne pepper 1 tsp salt 1/2 tsp ground black pepper 1/2 tsp dried thyme 1/4 tsp ground cinnamon 1/4 tsp ground nutmeg 1 whole chicken (5 to 6 pounds) Directions Preheat the oven to 450°F. Line a rimmed baking sheet with foil and place a baking rack on top. Pat the chicken dry with paper towels and place on the baking rack breast-side up. Mix the oil and spices together in a bowl then rub the spice mixture all over the outside of the chicken and under the skin of the breasts as best as you can. Truss the chicken with kitchen twine. Roast the chicken in the oven for 20 minutes then reduce the heat to 375°F and roast for 45 to 60 more minutes or until chicken is cooked through (165°F internal temperature). Take the chicken out of the oven and allow to rest for 15 minutes.

Add about one third of the dry ingredients to the butter and sugar and beat to combine.
