For the Chicken

  • 1 whole chicken (about 1.5–2 kg)
  • 1 thumb ginger, sliced
  • 5 cloves garlic
  • 2 stalks green onion
  • 1 tbsp salt

For the Rice

  • 2 cups jasmine rice
  • 2 tbsp chicken fat or oil
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 3 cups chicken broth (from the poached chicken)
  • 1 tsp salt

For the Chili Sauce

  • 5 red chilies
  • 3 cloves garlic
  • 1 tbsp ginger
  • 2 tbsp lime juice
  • 1 tsp sugar
  • 2 tbsp chicken broth
  • Salt to taste

For Serving

  • Soy sauce
  • Sesame oil
  • Cucumber slices
  • Fresh coriander

🍳 Instructions

1. Prepare the Chicken

  1. Clean and pat-dry the chicken.
  2. Rub with salt to smooth the skin, then rinse.
  3. Fill a large pot with water and add ginger, garlic, and green onion.
  4. Bring to a boil, gently lower the chicken, then simmer 40–45 minutes.
  5. Remove the chicken and immediately place it in ice water to keep the skin firm.
  6. Brush lightly with sesame oil and set aside.

2. Make the Chicken Rice

  1. Rinse rice until water runs clear.
  2. In a pot, heat chicken fat or oil.
  3. Sauté garlic and ginger until fragrant.
  4. Add rice and stir to coat each grain.
  5. Pour in hot chicken broth and add salt.
  6. Cook covered on low heat until fluffy.

3. Prepare the Chili Sauce

  1. Blend chilies, garlic, ginger, lime juice, sugar, salt, and chicken broth.
  2. Adjust seasoning to taste.

4. Assemble and Serve

  1. Chop chicken into pieces.
  2. Place a serving of fragrant rice on a plate.
  3. Add chicken slices, cucumber, chili sauce, soy sauce, and coriander.
  4. Drizzle a little sesame oil for extra flavor.
