A bold, spicy-savory Korean-inspired noodle dish made with gochujang, soy sauce, garlic, and tender chicken. Perfect for a fast 20-minute dinner!

For the Chicken

  • 300 g (10 oz) chicken breast or thighs, thinly sliced
  • 1 tbsp soy sauce
  • 1 tsp sesame oil
  • 1 tsp garlic, minced
  • ½ tsp black pepper

For the Noodles

  • 200 g rice noodles or udon noodles
  • 1 tbsp oil
  • 1 cup cabbage, shredded
  • 1 small carrot, thinly sliced
  • ½ onion, sliced
  • 2–3 green onions, chopped

For the Gochujang Sauce

  • 2 tbsp gochujang
  • 1 tbsp soy sauce
  • 1 tbsp honey or brown sugar
  • 1 tbsp rice vinegar or lime juice
  • 1 tbsp sesame oil
  • 2–3 tbsp water (to thin if needed)
  • 1 tsp minced garlic

👩‍🍳 Instructions

  1. Cook the noodles according to package instructions. Drain and set aside.
  2. Marinate the chicken with soy sauce, sesame oil, garlic, and black pepper for 10 minutes.
  3. Make the sauce: whisk gochujang, soy sauce, honey, sesame oil, rice vinegar, garlic, and water until smooth.
  4. Cook the chicken in 1 tbsp oil until browned and cooked through (5–7 minutes).
  5. Add onions, carrot, and cabbage. Stir-fry for 2–3 minutes.
  6. Add the cooked noodles and pour in the gochujang sauce. Toss until fully coated and saucy.
  7. Garnish with green onions and sesame seeds.
  8. Serve hot!
