🇨🇴 Sancocho Recipe (Traditional Latin American Stew)

Sancocho is a comforting, hearty stew enjoyed across Colombia, Dominican Republic, Puerto Rico, and other Latin countries. Made with chicken or beef, root vegetables, corn, plantains, and fresh herbs, it’s rich, warm, and perfect for family meals.

📝 Ingredients

Protein (choose one or mix):

  • 500g chicken (thighs or drumsticks)
  • or 500g beef chunks
  • or 500g pork ribs

Vegetables & Roots:

  • 2 ears of corn, cut into chunks
  • 2 green plantains, sliced

  • 1 tsp cumin
  • 1 tsp oregano
  • Salt & pepper to taste

🍲 How to Make Sancocho

1. Prepare the Base

  • In a large pot, sauté onion, garlic, and tomato until soft.
  • Add chicken/beef/pork and sear for a few minutes.

2. Add Water & Seasoning

  • Add enough water to cover the meat (about 6–7 cups).
  • Add cumin, oregano, salt, and pepper.
  • Simmer 30 minutes (longer if using beef).

3. Add the Vegetables

Add in this order (they cook at different speeds):

  1. Yuca and plantains
  2. Potatoes and carrots
  3. Corn pieces

Simmer until all vegetables are soft and the soup is thickened.

4. Add Fresh Herbs

  • Stir in chopped cilantro.
  • Adjust salt before serving.

🍽️ Serving Suggestions (5 Ideas)

1. Serve with White Rice

The most traditional side — spoon the stew over the rice.

2. Add Avocado Slices

Creamy avocado enhances the rich broth.

3. Serve with Lime Wedges

A squeeze of lime brightens the flavors.

4. Pair with Arepas or Bread

Perfect for dipping into the flavorful broth.

5. Add Aji or Hot Sauce

For those who like heat, a small spoon of spicy sauce works perfectly.
