  • 1 yuca (cassava), peeled and chopped
  • 1 carrot, chopped

Aromatics & Seasoning:

  • 1 onion, chopped
  • 3 garlic cloves, minced
  • 1 tomato, diced
  • 1 bunch cilantro
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt & pepper to taste

To Serve:

  • Lime wedges
  • Cooked white rice

🍲 How to Make Sancocho

1. Prepare the Base

  • In a large pot, sauté onion, garlic, and tomato until soft.
  • Add chicken/beef/pork and sear for a few minutes.

2. Add Water & Seasoning

  • Add enough water to cover the meat (about 6–7 cups).
  • Add cumin, oregano, salt, and pepper.
  • Simmer 30 minutes (longer if using beef).

3. Add the Vegetables

Add in this order (they cook at different speeds):

  1. Yuca and plantains
  2. Potatoes and carrots
  3. Corn pieces

Simmer until all vegetables are soft and the soup is thickened.

4. Add Fresh Herbs

  • Stir in chopped cilantro.
  • Adjust salt before serving.
