For the Chicken Wontons
- 300 g (10 oz) ground chicken
- 1 tbsp soy sauce
- 1 tbsp ginger, minced
- 1 tbsp garlic, minced

- ½ tsp white pepper
- Pinch of salt
- 30–35 wonton wrappers
For the Spicy Chili Sauce
- 2 tbsp chili oil (homemade or store-bought)
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp sugar
- 1 tsp sesame oil
- 1 garlic clove, grated
- 1 tsp Sichuan pepper (optional, for numbing flavor)
- 1–2 tbsp warm water (to thin)
- 1 tbsp green onions, chopped
- 1 tsp toasted sesame seeds

1. Make the wonton filling
Mix ground chicken, soy sauce, ginger, garlic, sesame oil, green onion, white pepper, and salt.
2. Fill the wontons
- Place 1 tsp filling in the center of each wrapper.
- Brush the edges with water.
- Fold into a triangle and pinch tightly.
- Bring the two corners together to form a “tortellini-style” wonton (optional).
3. Cook the wontons
- Bring a pot of water to boil.
- Add wontons and cook for 3–4 minutes or until they float.
- Remove using a slotted spoon.
4. Make the spicy chili sauce
In a small bowl, mix:
- Chili oil
- Soy sauce
- Rice vinegar
- Sesame oil
- Sugar
- Garlic
- Sichuan pepper
- Water to adjust thickness
5. Assemble
Place warm wontons in a bowl, pour spicy chili sauce on top, and sprinkle with green onions and sesame seeds.
