  • 1 tbsp soy sauce
  • 1 tbsp ginger, minced

  • ½ tsp white pepper
  • Pinch of salt
  • 30–35 wonton wrappers

For the Spicy Chili Sauce

  • 2 tbsp chili oil (homemade or store-bought)
  • 1 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tsp sugar
  • 1 tsp sesame oil
  • 1 garlic clove, grated
  • 1 tsp Sichuan pepper (optional, for numbing flavor)
  • 1–2 tbsp warm water (to thin)
  • 1 tbsp green onions, chopped
  • 1 tsp toasted sesame seeds

1. Make the wonton filling

Mix ground chicken, soy sauce, ginger, garlic, sesame oil, green onion, white pepper, and salt.

2. Fill the wontons

  • Place 1 tsp filling in the center of each wrapper.
  • Brush the edges with water.
  • Fold into a triangle and pinch tightly.
  • Bring the two corners together to form a “tortellini-style” wonton (optional).

3. Cook the wontons

  • Bring a pot of water to boil.
  • Add wontons and cook for 3–4 minutes or until they float.
  • Remove using a slotted spoon.

4. Make the spicy chili sauce

In a small bowl, mix:

  • Chili oil
  • Soy sauce
  • Rice vinegar
  • Sesame oil
  • Sugar
  • Garlic
  • Sichuan pepper
  • Water to adjust thickness

5. Assemble

Place warm wontons in a bowl, pour spicy chili sauce on top, and sprinkle with green onions and sesame seeds.
