  • 1 tsp sugar
  • 1 tbsp sesame oil
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 cup potato starch (or cornstarch)

1. Marinate the Chicken

  • Add chicken, soy sauce, sake (or substitute), ginger, garlic, sugar, sesame oil, salt, and pepper to a bowl.
  • Mix well and marinate for 15–30 minutes.

2. Coat the Chicken

  • Add potato starch to a shallow bowl.
  • Coat each chicken piece evenly for maximum crispiness.

3. Fry the Karaage

  • Heat oil to 170°C (340°F).
  • Fry chicken pieces for 4–5 minutes until golden.
  • Remove, rest for 2 minutes.
  • Fry again for 1 minute for extra crispiness (optional double fry).

4. Serve

  • Serve hot with lemon wedges, rice, or shredded cabbage.
