🥗 BBQ Salmon Bowls with Mango Avocado Salsa

A fresh, vibrant, protein-packed bowl made with smoky BBQ salmon, fluffy rice, and a sweet-tangy mango avocado salsa. Perfect for quick dinners, meal prep, or summer meals.


Ingredients

For the BBQ Salmon

  • 4 salmon fillets
  • ½ cup BBQ sauce
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • ½ tsp garlic powder
  • Salt & pepper to taste

For the Mango Avocado Salsa

  • 1 ripe mango, diced
  • 1 avocado, diced
  • ½ red onion, finely chopped
  • 1 jalapeño, seeded & diced
  • 2 tbsp fresh lime juice
  • 2 tbsp cilantro, chopped
  • Salt to taste

For the Bowls

  • 3 cups cooked white rice or brown rice
  • 1 cup shredded lettuce (optional)
  • 1 lime, for serving

🍽️ Instructions

1. Prepare the Salmon

  1. Preheat oven to 425°F (220°C).
  2. Place salmon on a lined baking tray.
  3. Brush salmon with olive oil, BBQ sauce, paprika, garlic powder, salt & pepper.
  4. Bake 10–12 minutes, or until flaky.
  5. Optional: broil for 1–2 minutes for caramelized edges.

2. Make the Mango Avocado Salsa

  1. Combine mango, avocado, red onion, jalapeño, cilantro, lime juice, and salt.
  2. Toss gently to avoid smashing the avocado.
  3. Chill until serving.

3. Assemble the Bowls

  1. Add a base of warm rice.
  2. Top with BBQ salmon.
  3. Spoon mango avocado salsa over the salmon.
  4. Add lettuce or lime wedges if desired.
  5. Serve immediately.
