🕒 Prep & Cook Time

  • Prep time: 25 minutes
  • Cook time: 45 minutes
  • Total time: 1 hour 10 minutes
  • Serves: 6–8

🧂 Ingredients

🥩 Meat Filling

  • 1 lb ground pork (or a mix of pork and beef)
  • 1 small onion, finely chopped
  • 1 clove garlic, minced
  • ½ cup water or beef broth
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon allspice
  • 1 small potato, peeled and grated

🥧 Pastry

  • 2 cups all-purpose flour
  • ½ teaspoon salt
  • ⅔ cup cold butter, cut into cubes
  • 4–5 tablespoons cold water

👩‍🍳 Instructions

  1. Prepare the filling:
In a large skillet, cook ground pork and onion over medium heat until browned. Drain any excess fat.

  2. Add seasonings:
Stir in garlic, salt, pepper, cinnamon, cloves, and allspice. Add water or broth and simmer for 10 minutes.

  3. Add potato:
Mix in the grated potato and cook until it softens and absorbs liquid (about 5–7 minutes). Let the filling cool.

  4. Make the pastry:
In a bowl, combine flour and salt. Cut in the cold butter until crumbly. Add cold water gradually until dough forms. Divide in half.

  5. Assemble the pie:
Roll out one half and line a 9-inch pie dish. Fill with cooled meat mixture. Top with remaining dough and seal edges. Cut small slits for steam.

  6. Bake:
Bake in a preheated oven at 400°F (200°C) for 35–40 minutes, until golden brown.

  7. Serve:
Let rest for 10 minutes before slicing. Serve warm with ketchup, cranberry sauce, or a side salad.

🍽️ Tips for Perfect Tourtière

  • Use half beef and half pork for a richer flavor.
  • Make the filling a day ahead to deepen the spice profile.
