  1. Heat oil in a large pot. Sauté garlic, onion, and ginger until fragrant.
  2. Add chicken pieces and cook until lightly browned.
  3. Season with fish sauce and stir well.
  4. Pour in water or chicken broth. Cover and simmer for 35–40 minutes, or until chicken is tender.
  5. Add green papaya (or chayote) and simmer for another 10 minutes until vegetables are soft.
  6. Stir in chili leaves (or spinach) and cook for 2 minutes.
  7. Adjust seasoning with salt and pepper.
  8. Serve hot with steamed rice.
