Beef Rezala Recipe – Traditional Bangladeshi Mughlai Curry

The Beef Rezala is a rich and aromatic Mughlai-inspired curry, very popular in Bangladesh and Kolkata. Unlike spicy curries, rezala is mildly spiced with yogurt, ghee, and whole spices, creating a delicate yet flavorful dish. Traditionally served at weddings and special occasions, this curry pairs beautifully with naan, paratha, or fragrant pulao.

If you want to try an authentic Bangladeshi beef recipe, this Beef Rezala is the perfect choice!

🥘 Ingredients (Serves 5–6)

  • 1 kg beef (medium pieces, preferably shank or shoulder)
  • 1 cup plain yogurt (well whisked)
  • 2 large onions (thinly sliced)
  • 3 tbsp ghee or oil
  • 1 tbsp ginger paste
  • 1 tbsp garlic paste
  • ½ cup milk
  • 2 tbsp cashew paste (or poppy seed paste, optional for creaminess)
  • 3–4 green chilies (whole)
  • 2 bay leaves
  • 4–5 green cardamoms
  • 3–4 cloves
  • 1-inch cinnamon stick
  • ½ tsp nutmeg powder (optional, for aroma)
  • ½ tsp mace powder
  • 1 tsp white pepper powder (or black pepper if unavailable)
  • Salt to taste

🔪 Instructions

  1. Fry onions

    • Heat ghee in a deep pan.
    • Fry sliced onions until golden brown. Remove half and set aside for garnish.
  2. Cook beef

    • In the same pan, add ginger, garlic, bay leaf, cinnamon, cloves, and cardamom.
    • Add beef pieces and sauté until browned.
  3. Add yogurt & spices

    • Lower the heat, mix in yogurt, cashew paste, nutmeg, mace, white pepper, and salt.
    • Stir well so the beef is coated with the creamy masala.
  4. Simmer

    • Add milk, whole green chilies, and cover with a lid.
    • Cook on low heat until beef is tender and oil separates (approx. 1.5–2 hrs).
    • Add water if needed for desired consistency.
  5. Garnish & serve

    • Top with reserved fried onions.
    • Serve hot with naan, paratha, or pulao.

🌟 Tips for Perfect Beef Rezala

  • Use full-fat yogurt to prevent curdling.
  • Cook on low flame for slow-simmered flavor.
  • Adding cashew paste makes the gravy richer and creamier.
  • White pepper gives a milder spice level, but black pepper can be used if preferred.

🍽 Serving Suggestions

  • Pair with naan, paratha, or plain pulao.
  • Serve alongside salad and lemon wedges.
  • Include in a festive platter with Bangladeshi Beef Curry or Tehari.
