Ingredients
- 1 kg chicken drumsticks or thighs
- 3 large onions, finely chopped
- 3 tbsp berbere spice
- 3 cloves garlic, minced
- 1 tbsp ginger, minced
- 3 tbsp niter kibbeh (Ethiopian spiced butter) or regular butter
- 2 tbsp tomato paste
- 1 cup chicken broth or water
- 2–3 boiled eggs (optional but traditional)
- Salt to taste
- 2 tbsp lemon juice
Instructions
Step 1: Prep the Chicken
- Soak chicken in lemon juice and a little salt for 15 minutes. Rinse and set aside.
Step 2: Cook the Onions
- Add chopped onions to a dry pot (no oil).
- Cook on medium heat until onions become soft and deep golden.
- This may take 20–30 minutes and builds authentic flavor.
Step 3: Add Butter & Spices
- Add niter kibbeh (or butter), garlic, and ginger.
- Stir in berbere spice and cook for 2–3 minutes until fragrant.
Step 4: Build the Stew
- Add tomato paste and mix well.
- Add chicken pieces and coat with the spice mixture.
