  • 2 sheets shortcrust pastry (store-bought or homemade)
  • 1 egg, beaten (for brushing) or milk for a vegetarian option

🍳 Instructions

1. Cook the Potatoes

Boil the diced potatoes in salted water until fork-tender (about 10–12 minutes). Drain and mash lightly.

2. Sauté the Onions

In a frying pan, melt butter and cook onions on low heat for 10–15 minutes until soft and golden. Add to the mashed potato.

3. Mix the Filling

Stir in grated cheddar cheese, mustard powder, salt, and pepper. Mix until well combined and allow to cool slightly.

4. Assemble the Pasties

Preheat oven to 200°C (400°F).
Cut pastry sheets into circles (about 6–7 inches wide). Place a few tablespoons of filling on one half of each circle. Fold over and crimp the edges to seal. Brush with egg wash.

5. Bake

Place on a parchment-lined baking tray and bake for 25–30 minutes, or until golden brown and flaky.
