For the Beef:

  • 1 kg beef (bone-in or boneless, cut into medium pieces)
  • 1 cup plain yogurt (whisked)
  • 1 large onion (finely sliced and fried until golden brown)
  • ¼ cup ghee or cooking oil
  • 2 tbsp ginger-garlic paste
  • ½ cup fresh cream (optional, for extra richness)

Spices:

  • 2 tsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp red chili powder (adjust to taste)
  • ½ tsp turmeric powder
  • 1 tsp garam masala powder
  • 1–2 green cardamoms
  • 1 cinnamon stick
  • 3–4 cloves
  • 1 bay leaf
  • Salt to taste

Garnish:

  • Fresh coriander leaves (chopped)
  • Fried onions (optional)
  • Sliced green chilies (optional)

Step-by-Step Cooking Method

Step 1 – Marinate the Beef

  • In a bowl, mix beef, yogurt, 1 tbsp ginger-garlic paste, salt, and half of the ground spices (except garam masala).
  • Cover and marinate for at least 1 hour (or overnight for deeper flavor).

Step 2 – Prepare the Base

  • Heat ghee/oil in a heavy-bottomed pan.
  • Add whole spices (cardamom, cinnamon, cloves, bay leaf) and sauté for 30 seconds until aromatic.
  • Add the remaining ginger-garlic paste and sauté for 1–2 minutes.

Step 3 – Cook the Beef

  • Add marinated beef and cook on medium-high heat until browned.
  • Lower the heat, cover, and let it cook in its own juices for 15–20 minutes.

Step 4 – Build the Gravy

  • Add fried onions, remaining ground spices, and stir well.
  • Pour in 1–2 cups hot water, cover, and simmer on low heat until beef is tender (45–60 minutes).

Step 5 – Finish with Creaminess

  • Stir in cream (optional) and garam masala.
  • Simmer for 5 more minutes for a rich texture.

Step 6 – Garnish & Serve

  • Garnish with coriander leaves, fried onions, and green chilies.
