Make delicious Gimbap (Kimbap) at home — Korea’s signature seaweed rice rolls filled with seasoned rice, vegetables, egg, and meat. Perfect for picnics, lunchboxes, or snacks!

For the Rice:

  • 2 cups short-grain white rice (cooked and cooled slightly)
  • 1 tbsp sesame oil
  • ½ tsp salt

For the Filling:

  • 2 eggs, beaten and cooked into a thin omelet, sliced
  • 1 carrot, julienned and lightly sautéed
  • 1 cucumber, julienned
  • 4–6 strips of imitation crab, beef, or tuna (optional)
  • 4–6 strips pickled radish (danmuji)
  • Spinach or blanched kale, seasoned with a pinch of salt and sesame oil

For Assembly:

  • 4 sheets of roasted seaweed (gim/nori)
  • Sesame oil and sesame seeds for brushing and garnish

  1. Prepare the rice:
    Mix cooked rice with sesame oil and salt. Let it cool to room temperature before rolling.

  2. Prepare the fillings:
    Cook and slice the omelet. Sauté carrots lightly until soft. Season spinach or kale with sesame oil and salt.

  3. Assemble the roll:
    Place a seaweed sheet shiny-side down on a bamboo sushi mat. Spread a thin layer of rice over two-thirds of the sheet, leaving a small gap at the end.

  4. Add the fillings:
    Lay the prepared vegetables, egg, and meat horizontally across the rice.

  5. Roll it up:
    Using the bamboo mat, roll tightly while applying gentle pressure. Seal the edge with a dab of water or rice.

  6. Slice and serve:
    Brush with a bit of sesame oil and sprinkle sesame seeds. Slice into bite-sized pieces using a sharp, oiled knife.
