Galbi (Korean BBQ Short Ribs)

Authentic Korean Galbi recipe made with tender beef short ribs marinated in a sweet and savory soy-based sauce. Perfect for BBQ nights and family dinners!

🥩 Ingredients:

  • 2 lbs (900 g) beef short ribs (flanken-cut, across the bone)
  • ½ cup soy sauce
  • ¼ cup brown sugar
  • 2 tbsp honey
  • 3 tbsp rice wine (mirin) or cooking wine
  • 1 Asian pear or 1 apple, grated
  • 4 garlic cloves, minced
  • 1 small onion, grated
  • 2 tbsp sesame oil
  • 1 tbsp sesame seeds
  • ½ tsp black pepper
  • 2 green onions, chopped (for garnish)

👩‍🍳 Instructions:

  1. Prepare the ribs:
Rinse the ribs under cold water to remove bone fragments. Pat dry with a paper towel.

  2. Make the marinade:
In a bowl, mix soy sauce, brown sugar, honey, rice wine, grated pear, minced garlic, grated onion, sesame oil, sesame seeds, and black pepper.

  3. Marinate the meat:
Add ribs to a large resealable bag or bowl and pour in the marinade. Coat evenly and marinate for at least 6 hours or overnight for best flavor.

  4. Grill the galbi:
Preheat a grill or grill pan to medium-high. Remove ribs from the marinade and grill each side for 3–4 minutes until caramelized and slightly charred.

  5. Serve hot:
Garnish with chopped green onions and sesame seeds.

🍽️ Serving Suggestions:

  • Serve Galbi with steamed rice, kimchi, and pickled radish.
  • Wrap grilled Galbi in lettuce leaves with rice and gochujang for a Korean-style ssam (wrap).
  • Pair with Korean potato salad or seaweed soup for a complete meal.

🧊 Storage Tips:

  • Refrigerate: Store leftover cooked Galbi in an airtight container for up to 3 days.
  • Freeze: Uncooked marinated ribs can be frozen for up to 2 months. Thaw before grilling.
  • Reheat: Reheat on a skillet or in the microwave with a splash of water to keep it moist.
