Ingredients
For the Marinade:
- 500g boneless chicken (cut into bite-sized cubes)
- 4 tbsp thick yogurt
- 1 tbsp lemon juice
- 1 tbsp ginger-garlic paste
- 1½ tsp Kashmiri red chili powder (for color & mild heat)
- 1 tsp turmeric powder
- 1½ tsp garam masala
- 1 tsp cumin powder
- 1 tsp coriander powder
- 2 tbsp mustard oil (or vegetable oil)
- Salt to taste
Instructions
Step 1: Prepare the Chicken
Wash and pat dry chicken pieces. Make small cuts to help the marinade penetrate deeper.
Step 2: Marinate the Chicken
In a mixing bowl, combine yogurt, lemon juice, ginger-garlic paste, and all spices. Add mustard oil and whisk until smooth. Coat chicken pieces evenly, cover, and refrigerate for at least 2 hours (overnight for best flavor).
Step 3: Grill or Bake
- Grill/BBQ: Preheat grill to medium-high heat. Cook chicken for 12–15 minutes, turning occasionally, until fully cooked.
- Oven: Preheat to 220°C (425°F). Place chicken on a baking rack and cook for 20–25 minutes, flipping halfway.
- Air Fryer: Cook at 200°C (390°F) for 12–15 minutes.

For an authentic smoky aroma, place a small bowl with hot charcoal in the middle of the cooked chicken, drizzle oil on the charcoal, cover, and let it infuse for 2 minutes.
