Step-by-Step Instructions

1. Sauté the Onions

  • Heat oil in a large pot over medium heat.
  • Add chopped onions and sauté until golden brown (15–20 minutes).
  • Stir frequently to avoid burning—this is key to flavor!

2. Add Garlic and Paprika

  • Add garlic, tomato paste, and both paprikas.
  • Stir for 30 seconds to bloom the spices—don’t burn the paprika.

3. Brown the Beef

  • Add beef cubes and stir to coat in the onion-paprika mixture.
  • Cook for 5–10 minutes until browned on all sides.

4. Season and Simmer

  • Add marjoram, caraway seeds, salt, pepper, and bay leaf.
  • Pour in the beef broth. The liquid should just cover the meat.
  • Bring to a boil, reduce to low, and simmer gently for 1.5 to 2 hours, covered.

5. Thicken and Finish

  • Optional: Mix flour with a bit of water and stir into the stew for a thicker gravy.
  • Simmer uncovered for 10–15 more minutes.
