  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 cup long-grain white rice (uncooked)
  • 2 cups chicken broth
  • 1 cup frozen peas and carrots (optional)
  • 1 teaspoon paprika
  • ½ teaspoon ground black pepper
  • Salt to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Sear the Chicken
    Heat olive oil in a large skillet or Dutch oven over medium heat. Add chicken pieces, season with salt, pepper, and paprika, and brown for 4–5 minutes until golden. Remove and set aside.

  2. Sauté the Aromatics
    In the same pot, add diced onion and garlic. Sauté for 2–3 minutes until softened and fragrant.

  3. Add the Rice and Broth
    Stir in the uncooked rice. Pour in chicken broth and bring to a light simmer.

  4. Combine and Cook
    Return the chicken to the pot, cover with a lid, and reduce heat to low. Simmer for 18–20 minutes, or until the rice is cooked and liquid is absorbed.

  5. Add Veggies (Optional)
    If using frozen peas and carrots, stir them in during the last 5 minutes of cooking.

  6. Fluff and Serve
    Remove from heat. Let it sit covered for 5 minutes, then fluff with a fork. Garnish with chopped parsley and serve warm.
