  • 200g (2 cups) mushrooms (button, cremini, or mixed), sliced
  • 1 tsp dried thyme or Italian herbs
  • 200ml (¾ cup) heavy cream
  • 100ml (⅓ cup) chicken stock
  • 2 tbsp grated Parmesan (optional for extra richness)
  • Fresh parsley, chopped (for garnish)

1. Season and sear the chicken:
Season the chicken with salt and pepper. Heat olive oil in a large skillet over medium heat. Cook the chicken for 4–5 minutes on each side until golden and cooked through. Remove and set aside.

2. Cook the aromatics and mushrooms:
In the same pan, add a little more oil if needed. Sauté onions for 2 minutes until translucent. Add garlic and mushrooms. Cook for 5–6 minutes until mushrooms are golden and tender.

3. Make the creamy sauce:
Stir in thyme, then pour in chicken stock. Let it simmer for 2 minutes. Add the cream and Parmesan, stirring until the sauce thickens slightly.

4. Combine and serve:
Return chicken to the pan and simmer for another 3–4 minutes until heated through. Garnish with chopped parsley.
