  • 2 ripe peaches, halved and pitted
  • 4 cups arugula (or mixed greens)
  • ½ cup crumbled feta cheese (or goat cheese)
  • ¼ cup red onion, thinly sliced
  • ¼ cup chopped toasted pecans or walnuts
  • 2 tbsp olive oil, for grilling
  • Salt & pepper, to taste

For the Dressing:

  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar or glaze
  • 1 tsp Dijon mustard
  • 1 tsp maple syrup or honey
  • Salt & pepper, to taste

Step 1: Grill the Peaches

  3. Grill cut side down for 2–3 minutes until grill marks appear and peaches are softened.

Step 2: Prepare the Salad
