Diwali Faral Recipes
Diwali Faral is a traditional spread of snacks and sweets prepared for the festival of lights. Here are recipes for three popular items: Chivda, Ladoo, and Chakli.
1. Chivda Recipe (Poha Chivda)
Ingredients
Thin poha (flattened rice) – 2 cups
Peanuts – 1/4 cup
Roasted gram dal (daliya) – 2 tbsp
Curry leaves – 8-10
Green chilies – 2, finely chopped
Turmeric powder – 1/4 tsp
Mustard seeds – 1 tsp
Sugar – 1/2 tsp
Salt – to taste
Oil – 2 tbsp
Instructions
1. Roast the Poha: Dry roast the poha on low heat until crisp. Remove and set aside.
2. Prepare the Tempering: Heat oil in a pan. Add mustard seeds and let them splutter. Add green chilies, curry leaves, and peanuts. Sauté until the peanuts are golden.
3. Combine: Add roasted gram dal, turmeric powder, salt, and sugar. Mix well.
4. Finish: Add the roasted poha and mix gently to coat evenly with the spices. Cool completely before storing.
2. Besan Ladoo Recipe
Ingredients
Besan (gram flour) – 2 cups
Ghee – 1/2 cup
Powdered sugar – 1 cup
Cardamom powder – 1/2 tsp
Chopped nuts (cashews, almonds) – 2 tbsp (optional)
Instructions
1. Roast the Besan: Heat ghee in a pan. Add besan and roast on low heat until golden brown and aromatic (about 20 minutes). Stir continuously to avoid burning.
2. Add Cardamom and Nuts: Mix in cardamom powder and chopped nuts. Allow the mixture to cool slightly.
3. Add Sugar: Once warm, add powdered sugar and mix well.
4. Shape Ladoos: Take small portions and shape them into round ladoos. Store in an airtight container.
3. Chakli Recipe (Murukku)
Ingredients
Rice flour – 2 cups
Gram flour (besan) – 1/2 cup
Sesame seeds – 1 tsp
Carom seeds (ajwain) – 1/2 tsp
Turmeric powder – 1/4 tsp
Red chili powder – 1/2 tsp
Butter – 2 tbsp, softened
Salt – to taste
Water – as needed
Oil – for deep frying
Instructions
1. Prepare the Dough: In a bowl, mix rice flour, gram flour, sesame seeds, carom seeds, turmeric, red chili powder, salt, and butter. Gradually add water to form a soft, non-sticky dough.
2. Shape the Chaklis: Fill the dough into a chakli maker and press it to form spiral shapes on parchment paper.
3. Fry: Heat oil in a deep pan. Fry the chaklis on medium heat until golden brown and crispy. Drain on paper towels.
4. Cool and Store: Let them cool completely before storing in an airtight container.
