This comforting and nutritious lentil soup is packed with flavor, easy to make, and perfect for a satisfying meal.
Ingredients:
1 cup dried lentils (green or brown, rinsed and drained)
2 tablespoons olive oil
1 medium onion, finely chopped
2 carrots, diced
2 celery stalks, diced
3 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/2 teaspoon dried thyme
1/4 teaspoon red pepper flakes (optional)
1 can (14.5 oz) diced tomatoes, with juices
6 cups vegetable or chicken broth
1 bay leaf
Salt and pepper, to taste
1-2 cups fresh spinach or kale (optional)
Juice of 1 lemon (optional, for brightness)
Instructions:
1. Prepare the Base:
Heat olive oil in a large pot over medium heat.
Add onions, carrots, and celery. Sauté for 5-7 minutes until softened.
2. Add Garlic and Spices:
Stir in garlic, cumin, smoked paprika, thyme, and red pepper flakes (if using). Cook for 1 minute until fragrant.
3. Add Tomatoes and Broth:
Add the diced tomatoes with their juices, broth, lentils, and bay leaf. Stir to combine.
4. Simmer:
Bring the mixture to a boil, then reduce heat to low. Cover and simmer for 25-30 minutes, or until the lentils are tender.
5. Add Greens (Optional):
Stir in spinach or kale and cook for an additional 2-3 minutes until wilted.
6. Season and Serve:
Remove the bay leaf. Season with salt, pepper, and a squeeze of lemon juice to taste.
Serve hot with crusty bread or crackers.
Tips:
Lentil Variations: Red lentils cook faster and break down for a creamier texture. Adjust cooking time accordingly.
Protein Boost: Add diced cooked chicken, sausage, or tofu for extra protein.
Storage: Store leftovers in an airtight container in the fridge for up to 5 days, or freeze for up to 3 months.
This hearty lentil soup is a delicious, budget-friendly dish that's perfect for meal prep or a cozy dinner!
