Butter Chicken is a creamy, flavorful Indian dish that can be easily adapted for a keto diet by avoiding sugar and keeping it low-carb. Here's a keto-friendly version:
Ingredients
For the Chicken:
Chicken (boneless, skinless thighs or breasts) – 500 g, cut into bite-sized pieces
Yogurt (full-fat, unsweetened) – 1/4 cup
Ginger-garlic paste – 1 tbsp
Turmeric powder – 1/2 tsp
Red chili powder – 1 tsp
Garam masala – 1/2 tsp
Salt – to taste
Lemon juice – 1 tbsp
Ghee or oil – 2 tbsp (for cooking)
For the Sauce:
Butter – 2 tbsp
Onion – 1 medium, finely chopped
Garlic – 4 cloves, minced
Ginger – 1 inch, minced
Tomato puree (fresh or canned) – 1 cup
Heavy cream – 1/2 cup
Kasuri methi (dried fenugreek leaves) – 1 tsp, crushed
Garam masala – 1 tsp
Cumin powder – 1/2 tsp
Paprika – 1/2 tsp (optional for color)
Salt – to taste
Instructions
Step 1: Marinate the Chicken
1. In a bowl, combine yogurt, ginger-garlic paste, turmeric, chili powder, garam masala, salt, and lemon juice.
2. Add the chicken pieces and mix well. Cover and marinate for at least 30 minutes (or overnight for better flavor).
Step 2: Cook the Chicken
1. Heat ghee or oil in a large skillet over medium heat. Add the marinated chicken pieces.
2. Cook until the chicken is browned and almost cooked through. Remove from the skillet and set aside.
Step 3: Make the Sauce
1. In the same skillet, add butter and let it melt.
2. Add chopped onions and sauté until golden brown.
3. Stir in garlic and ginger and cook until fragrant.
4. Add tomato puree, cumin powder, paprika, and garam masala. Simmer for 5-7 minutes until the oil separates.
Step 4: Combine and Simmer
1. Return the cooked chicken to the skillet. Mix well to coat the chicken with the sauce.
2. Stir in heavy cream and crushed kasuri methi. Simmer for another 5 minutes on low heat. Adjust salt as needed.
