Gajar Ka Halwa Recipe
Gajar Ka Halwa, or carrot halwa, is a classic Indian dessert made with grated carrots, milk, sugar, and ghee. It's perfect for celebrations or a comforting treat!
Ingredients
Carrots (red or orange, grated) – 1 kg
Full-fat milk – 1 liter
Ghee (clarified butter) – 4 tbsp
Sugar – 1 cup (adjust to taste)
Cardamom powder – 1/2 tsp
Khoya (optional, for richness) – 1/2 cup, grated
Mixed nuts (almonds, cashews, pistachios) – 2-3 tbsp, chopped
Raisins – 1 tbsp
Instructions
Step 1: Prepare the Carrots
1. Wash, peel, and grate the carrots using a medium grater.
Step 2: Cook the Carrots in Milk
1. Heat a heavy-bottomed pan or kadhai. Add the grated carrots and sauté for 5 minutes until they soften slightly.
2. Pour in the milk and bring it to a boil. Reduce the heat and simmer, stirring occasionally, until the milk is fully absorbed (takes about 40-50 minutes).
Step 3: Add Ghee and Sugar
1. Add ghee to the cooked carrots and sauté for 5-7 minutes, stirring frequently.
2. Stir in the sugar and continue cooking. The mixture will release some moisture; cook until it thickens again.
Step 4: Enhance the Flavor
1. Add cardamom powder, khoya (if using), and half of the chopped nuts. Mix well and cook for another 5 minutes.
Step 5: Garnish and Serve
1. Garnish with the remaining nuts and raisins.
2. Serve warm or chilled, as preferred.
Tips for Best Results
Use fresh, tender carrots for natural sweetness and better texture.
For a richer flavor, substitute part of the milk with condensed milk.
Cook on low to medium heat for even cooking and to prevent burning.
