Dal Tadka Recipe
Dal Tadka is a comforting and flavorful Indian lentil dish, featuring cooked lentils tempered with aromatic spices. It pairs beautifully with steamed rice, roti, or naan.
Ingredients
For the Dal:
Toor dal (pigeon pea lentils) – 1 cup
Water – 3 cups
Turmeric powder – 1/2 tsp
Salt – to taste
Tomatoes – 2, finely chopped
Ginger – 1 inch, grated
Green chilies – 2, slit
For the Tadka (Tempering):
Ghee or oil – 2 tbsp
Mustard seeds – 1/2 tsp
Cumin seeds – 1 tsp
Garlic – 4-5 cloves, minced
Dried red chilies – 2-3
Curry leaves – 8-10
Asafoetida (hing) – a pinch
Red chili powder – 1/2 tsp
Garam masala – 1/2 tsp
For Garnish:
Fresh coriander leaves – 2 tbsp, chopped
Lemon wedges – for serving
Instructions
Step 1: Cook the Dal
1. Wash the toor dal thoroughly and soak it for 30 minutes (optional but helps it cook faster).
2. In a pressure cooker, add the dal, water, turmeric powder, ginger, green chilies, and tomatoes.
3. Pressure cook for 3-4 whistles (or cook in a pot until the dal is soft and mushy).
4. Mash the cooked dal lightly with a spoon and add salt. Simmer for 5 minutes.
Step 2: Prepare the Tadka
1. Heat ghee or oil in a small pan. Add mustard seeds and let them splutter.
2. Add cumin seeds, minced garlic, dried red chilies, curry leaves, and asafoetida. Sauté until the garlic turns golden.
3. Add red chili powder and garam masala. Mix well and turn off the heat immediately to prevent burning.
Step 3: Combine
1. Pour the prepared tadka over the simmering dal. Cover the pot immediately to trap the aroma.
2. Stir gently to mix the flavors.
Serving Suggestion
Serve Dal Tadka hot, garnished with fresh coriander leaves and a drizzle of ghee. Pair it with steamed basmati rice, jeera rice, or flatbreads like roti or naan. Squeeze fresh lemon juice for a tangy kick.
