- 6 cups hot water (adjust as needed)
- 1 tbsp ghee or clarified butter (optional for aroma)
- Whole spices (2 cardamoms, 1 bay leaf, 2 cloves)
🍽️ Instructions
Step 1: Cook the Beef
- Heat mustard oil in a heavy-bottomed pot until it starts to smoke (this removes bitterness).
- Reduce heat, add whole spices, then sliced onions. Sauté until golden brown.
- Add ginger, garlic paste, and cook for 1–2 minutes.
- Add beef, yogurt, turmeric, red chili powder, cumin, coriander, and salt.
- Cook on medium-high heat until the beef releases water and the spices coat the meat.
- Cover and simmer until beef is 80% tender (about 40–50 minutes). Add water if needed.
Step 2: Prepare the Rice
- In a separate pot, heat a spoon of oil or ghee.
- Add whole spices, then the soaked and drained rice.
- Sauté gently for 2–3 minutes until fragrant.
Step 3: Combine & Cook Tehari
- Layer the semi-cooked beef at the bottom of the pot.
- Spread the rice evenly on top.
- Add 5–6 cups of hot water (just enough to cover the rice).
- Cover tightly and cook on medium-low heat (dum method) for 20–25 minutes.
- Once done, gently fluff the rice and mix with the beef.
