  • 1 tsp ground cumin
  • ½ tsp smoked paprika
  • ½ tsp chili powder (optional)
  • Salt and pepper to taste
  • 1 ripe avocado, diced
  • Juice of ½ lime
  • Fresh cilantro, chopped (for garnish)

  1. Rinse rice under cold water until water runs clear. Drain well.
  2. Sauté aromatics: In a large skillet or saucepan, heat olive oil over medium heat. Add onions and garlic; sauté until soft and translucent.
  3. Toast the rice: Stir in rice and cook for 2–3 minutes until lightly golden.
  4. Add flavor: Mix in diced tomatoes, vegetable broth, cumin, paprika, chili powder, salt, and pepper.
  5. Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes (or until rice is tender and liquid is absorbed).
  6. Rest: Turn off the heat and let rice sit (covered) for 5 minutes.
  7. Fluff and top: Fluff the rice with a fork. Add diced avocado, squeeze fresh lime juice, and sprinkle chopped cilantro.
  8. Serve hot – as a main dish or a flavorful side!
