- 1 cup long grain rice (white or brown)
- 2 tbsp olive oil
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 cup canned diced tomatoes (or fresh, chopped)
- 1 ½ cups vegetable broth
- 1 tsp ground cumin
- ½ tsp smoked paprika
- ½ tsp chili powder (optional)
- Salt and pepper to taste
- 1 ripe avocado, diced
- Juice of ½ lime
- Fresh cilantro, chopped (for garnish)
👩🍳 Instructions:
- Rinse rice under cold water until water runs clear. Drain well.
- Sauté aromatics: In a large skillet or saucepan, heat olive oil over medium heat. Add onions and garlic; sauté until soft and translucent.
- Toast the rice: Stir in rice and cook for 2–3 minutes until lightly golden.
- Add flavor: Mix in diced tomatoes, vegetable broth, cumin, paprika, chili powder, salt, and pepper.
- Simmer: Bring to a boil, then reduce heat to low. Cover and simmer for 18–20 minutes (or until rice is tender and liquid is absorbed).
- Rest: Turn off the heat and let rice sit (covered) for 5 minutes.
- Fluff and top: Fluff the rice with a fork. Add diced avocado, squeeze fresh lime juice, and sprinkle chopped cilantro.
- Serve hot – as a main dish or a flavorful side!
